1. By way of introduction, my husband and I (Kristin) are currently in the middle of our international adoption, bringing home this little one will make ours a family of nine. We’ve identified a little girl with some special needs in Thailand and are praying hard that we’ll be able to adopt her. Thailand would have to make some exceptions in our case, and right now we’re just doing the old wait and wait and wait routine. One of these days we’ll hear something! : )

In the meantime, though, we’re working on raising funds, and that’s why I’m contacting you. My husband works in the film and video industry, so the idea for a film festival fundraiser was a no brainer for us. The festival is scheduled for October 28th, 2011. Our biggest need at this point is film submissions- we’re trying to round up a great variety of films to show, and need to get the word out. We’ll consider films from anyone, professional or amateur, the only real requirements are that they be short (under 15 minutes) and family friendly. I am sending 110 headbands to Elisa for your project. I found her when a post was made on a chat board I frequent asking for a cheap place to buy headbands. When I found out why, I knew God had directed me to your project! I have been selling bows and hair accessories for 6 years at craft shows and online. God has placed adoption on the heart of my family. We decided last year to adopt a special needs child from China. We have been met by all sorts of obstacles and are currently in a holding pattern, waiting on God’s hand of provision and perfect timing to move mountains. In the meantime, I fund raise for our family ( www.keystoChina.blogspot.com ) and support other famiies through donations of my products for giveaways. I’m donating 10% of all sales in May to the Sparrow Fund ( www.sparrow-fund.org ) It’s a thrill to send these headbands for your trip. 2.  We are using two of Kari’s Simply Love Tees to fundraise for a little village called Ogoloi, in Uganda! Our goal is to build a kitchen and storage area to better enable Children’s Hope Chest to feed the children! As are many children in U…ganda, many of these children have lost one or both parents from disease, malnutrition, and rebel attacks. Children often raise their brothers and sisters. Building this kitchen begins efforts to help Ogoloi return to self-sustainability! 5.  My husband and I are traveling to Nairobi, Kenya in August and we are raising money to bring backpacks and school supplies to the orphans at Gathiga Children’s Hope Home. Some children are not able to attend school simply because they don’t have a backpack (which is regulation starting in grade 4 in Nairobi). I’m cooking today for orphans – You are invited!

Welcome to My Crazy Adoption blog!  I’m a big follower (like you) of Tom Davis and Children’s HopeChest Ministries.  I was so honored to host their 1st Valentine’s Day Project and “you” helped raise a TON of funds for new shoes for orphans in Ethiopia.  This week, I’m so excited to be a part of a new special project for HopeChest and Destiny Foods Direct.  They are partnering and working together to feed orphans all over the world.  I was thrilled to be asked to cook and blog about their project, as well as share a meal with you!

Zoie and I went crazy when this big box was delivered at our door.  I love how they make a bold statement with the packaging … right off you know you are making a difference in the lives of orphans.  Is this cool or what?  I have prepared two delicious recipes for you and even have a fun ‘Flip’ video of my awesome hubby grill’n the meat and showing off his skills.

My Crazy Easy Chicken Recipe:

Step by Step Cooking Video- Part 1 & 2

I started out with my super-quick thaw chicken from Destiny Foods Direct. This company provides all natural beef, poultry, and pork–plus they donate $50 from every sale back to Children’s HopeChest.

What You Need!

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 2 Tbsp.  flour
  • 1 Tbsp. oil
  • 3/4 cup  fat-free reduced-sodium chicken broth
  • 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
  • 1 Tbsp.  chopped fresh parsley

Serves 4

Make It!

COAT -  chicken with flour. Heat oil in large skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until cooked through (165°F). Remove chicken from skillet, reserving drippings in skillet. Cover chicken to keep warm.

ADD – broth to skillet; stir to scrape up browned bits from bottom of skillet. Add cream

cheese; cook 2 to 3 min. or until cream cheese is melted and sauce starts to thicken, stirring constantly with wire whisk.

RETURN – chicken to skillet; turn over to coat both sides of chicken with sauce. Cook 2 min. or until chicken is heated through. Sprinkle with parsley.

My Crazy Easy Beef recipe:

I started out with my steak from Destiny Foods Direct. This company provides all natural beef, poultry, and pork–plus they donate $50 from every sale back to Children’s HopeChest.

Notice a few things here…

1. This steak is trimmed of excess fat. There’s a nice marbled look to it–but the unnecessary fat is gone–a major plus since fat = weight and you buy steak by the pound.

2. Harder to tell from the photos–but each of these steaks was individually vacuum packed and quick frozen. They thaw super-quick, and a fresh and ready to go.


  • 1/4 cup soy sauce
  • 2 tablespoons sesame seeds, toasted
  • 2 garlic cloves, minced
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons brown sugar
  • 1/4 teaspoon pepper
  • 1 dash hot pepper sauce
  • 3/4 pound (3/4 inch thick) boneless beef sirloin steak


In a large resealable plastic bag, combine the soy sauce, sesame seeds, garlic, oil, brown sugar, pepper and hot pepper sauce. Pierce steak on both sides with a fork; place in the bag. Seal and turn to coat; refrigerate for 8 hours or overnight.

  1. Drain and discard marinade. Grill the steak, covered, over medium heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F).

Destiny Foods Direct ‘food facts’

Why buy meat this way?

First, it’s cheaper. Destiny Foods Direct.adds no water or flavoring solutions to their products. These solutions add unnecessary weight and cost you more at the grocery story–10-20 percent more.

Second, it’s better. Look at those photos…the fat is trimmed for you. Who likes unnecessary fat on their steak. Yuck. My NEW Chocolate T’s… they are so yummy!

I simply love chocolate.  I love hot chocolate, chocolate scones, mocha coffee, chocolate candy and my new chocolate Simply Love T shirts!  I’m so excited to offer you my favorite brand of T… Alternative Vintage, too!  They are the same slim I used for my Valentine HopeChest Project.  They fit slim cut, super soft and longer length.  I recommend ordering 1 size bigger.

When will I get my Simply Love T shirts?

When should I receive my Simply Love T shirt in the mail?

As I shared previously, I’m ordering ALL T shirts on December 16th.  I had to wait to order in bulk.  Unfortunately, we do not have an inventory of T shirts in stock due to fundraiser.  Once the BIG CRAZY order is made, the T shirts will be shipped and printed at Santa’s shop.  I received notice today, that He will work extra hard to deliver them back to me by the end of the week.  A few choice elves will help me stuff envelops on Sunday and if all goes well, in the mail to you on Monday- December 21st. Christmas must be something more… as you celebrate Christmas season this year, make a decision to do something for an orphan. We can ALL make a difference.  Enjoy a special video of our adoption to honor the true meaning of Christmas.  Feel free to share this Vimeo on your blogs.

A gift for you: I really want to encourage anyone who has adopted to create a special video that documents your Forever Day.  Even if your adoption was years ago, sharing the memories with family and friends can be life-changing!  I know this can be intimidating if you feel computer illiterate or a little lost knowing how to put it all together.  One of my passions, as you know is adoption videos.  I would like to offer you my help.  I’m not a professional, but as a part of fundraising for our next adoption, for $15.00 I will create a Forever Family Photo iDVD for you to enjoy for years to come.  This includes the custom made DVD and shipping. You can mail me a disk with all your adoption photographs (no videos) and I’ll take it from there. Quick Tip- Target makes it super easy to “burn” a photo disk.  You can share quotes, verses or favorite songs that you want me to use or just be surprised!  Typically 100 photos will make a 3-4 minute photo video.  I would love to feature your video (with permission) on my blog.  You can pay me on the Paypal button or send me a check with your photo CD.
